Salisbury Steak with Feta Cheese Mashed Potatoes!


This is a hit at our house! The kids LOVE it and it's super easy to make! They call it "Hamburgers without buns."

What you will need:

For Steaks:

1 lb. ground beef

1 egg

1 large onion, 1/2 diced 1/2 cut into long pieces to saute

1/4 cup crushed saltine crackers

2 tablespoons milk

1 tablespoon mustard

1/4 teaspoon salt

1/8 teaspoon pepper

1/4 teaspoon garlic powder

For gravy:

Pan drippings (about 2 Tablespoons)

2 Tablespoons flour

1 1/4 cups water

1 Teaspoon browning sauce

1 beef bouillon cube

For Potatoes:

Add 2/3 cup of hot milk

1/4 Cup of butter cut into smaller pieces

1/4 Cup of sour cream

1/4 Cup of Feta Cheese Crumbles

Salt and Pepper to taste

Get Started:

Mix all of the steak ingredients in a bowl (I use my hands to make sure they really get mixed well. If you defrost your ground beef just before, be careful, as the edges may be hot!

Once it is all mixed, I cook mine over the stove for about 10-12 mins depending on the thickness. I kick up the heat towards the end to brown them a bit. Once they are done, stick them in the oven while you make the gravy and potatoes.

To make the gravy, you mix the drippings from the pan you just cooked your steaks in with the other ingredients. Be sure to mix your flour into your cold water first otherwise you will have lumpy gravy!

You can add to stove top on low to get nice and hot again!

For the Mashed potatoes, I use the Yukon Gold, and I don't peel mine (I know most do, but I like the added flavor and texture leaving the skins on.

Cube your potatoes before cooking!

Bring potatoes to a boil, and then reduce to low heat for about 20 minutes. Once they are ready, you can strain the water and keep them in the pot they are already in and add the rest of the ingredients. Mash away! These are so yummy, the feta crumbles melt away into them, so it makes them extra creamy and smooth when you mix them!
